Our TeaDrops Ambassador, Sara recently shared a chocolatey recipe that was a hit at her Passover Seder dinner last week. The simplicity of the recipe make them the perfect any-time treat that was just too good not to share. What a great complement to a nice cuppa tea :) Thank you, Sara for sharing the (chocolate) love. In Sara's words:
These cookies are the perfect option for a tea & cookies afternoon treat. They're light, chocolatey and are even passover-friendly!
Flourless Chocolate Cookies
Ingredients:
- Parchment Paper
- 3 cups confectioners' sugar
- 1/2 cup plus 3 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
- 4 egg whites
- 1 tablespoon vanilla extract
Preparation:
Pre-heat the oven to 350°. Line the baking sheet with parchment paper. Mix sugar, cocoa and salt in a bowl. Add egg whites and vanilla in a separate bowl, then pour the wet mix in with the dry mix. Stir just until moistened. Drop by tablespoon onto the baking sheets, and bake until tops are lightly cracked and glossy. (Do not overbeat batter or it will stiffen.) Drop batter by the teaspoonful onto baking sheets in evenly spaced mounds. Bake cookies until tops are lightly cracked and glossy, which is about 15 minutes. Accompany with your favorite Teadrops flavor and enjoy!
