Simple Vegan Breakfast: Mung Bean Pancakes!

I've always been curious about the vegan lifestyle and so when my friend, Brynne visited this weekend who mostly subscribes to a vegan diet, I was really excited that we would be making vegan breakfast together. She introduced me to Mung Bean Pancakes which have a texture right in between a traditional pancake and a crepe. They're actually delicious, especially with a simple peach topping. We enjoyed the pancakes over some masala chai with coconut milk and it was the perfect Saturday breakfast! I loved it so much I had to share the recipe with you.

I encourage you to give this recipe a try, no matter what your dietary preferences are (as long as you are OK with gluten). I'm certainly going to make it again very soon for myself. I can't wait to hear what you think!

Mung Bean Pancakes (makes 2 medium sized pancakes)

* Soak the mung beans and basmati rice in a full cup of water over night.

Ingredients:

  • 1/4 cup basmati brown rice
  • 1/4 cup mung beans (you can find this at Whole Foods)
  • Water (enough for rinsing and enough for 1/4 inch above mix)
  • Coconut oil (to oil skillet)

What else you need:

  • A super blender (I used a Nutribullet)
  • Medium sized skillet
  • Spatula
  • Strainer

Directions:

  1. Drain the mung bean and basmati rice with the strainer
  2. Add the mung bean and basmati rice mixture to a cup and pour enough water so that it sits 1/2 inch above the mixture.
  3. Add the new mixture to a blender and fully blend until mixture is like a crepe mix (not too think, yet not extremely runny).
  4. Add some coconut oil (1/4 teaspoon) to your skillet and evenly distribute. Turn onto medium heat. Let sit for a minute or two. Let oil heat, but not burn.
  5. Add enough pancake mixture to cover the surface bottom of skillet (enough to make a thin crepe). Heat side for a minute or so until there no liquid from the mixture is visible.
  6. Turn pancake over with spatula and cook for another minute.
  7. Remove and place on a plate.
  8. Repeat for the remainder of the pancake batter.

Peach Topping

  • Dice one peach and add to a stove top sauce pan
  • Add 1/4 cup water and simmer for 8 minutes or so.
  • Add a teaspoon of brown sugar if desired.
