We are all about delicious ways to integrate some of nature's healthiest supplements into your daily diet and routine. Sashee has been experimenting in the kitchen with ways to infuse our new Turmeric Tea Drop into healthy dishes. We stumbled upon an absolutely yummy way to add our current favorite--turmeric--into a hearty and easy-to-make dish packed with antioxidants. Warm, comforting, with a kick of spice, it's the perfect way to combat the cold weather, boost your immunity, and incorporate the love of tea into your cooking. The Turmeric Coconut Curry infused with Turmeric Tea Drops is creamy, savory, spicy, and subtley sweet all at the same time. And best of all, you can easily accomplish this dish in 30 minutes or less!
Turmeric Coconut Curry
Total cook time: 30 mins
2 Turmeric Tea Drops
1 tablespoon hot water
1 teaspoon organic coconut oil
1 can of organic coconut milk (13.5fl oz)
1 tablespoon chopped garlic
1 teaspoon curry powder
1/2 teaspoon cinnamon + 1-2 cinnamon sticks (optional)
1/2 teaspoon salt
1lb organic chicken breast
Dice chicken into cubes and set aside. In a separate bowl, mix the coconut milk, curry powder, cinnamon, and salt together.
Mix 1 tablespoon of hot water and the two turmeric Tea Drops in another bowl. Add to the coconut milk mix.
Add the chicken to the mix and if you have time, marinate for 15-30 mins.
In a skillet, add some coconut oil and sauté the garlic.
Add the curry chicken and let the the stove sit on medium flame. Allow to cook and occasionally stir every few minutes for the next 10-15 mins until fully cooked.
When done, serve with rice and/or fresh vegetables and enjoy!
